Maracujá Sour

First without ice, to build the foam; then with ice, to chill it down.

1. Pour the aguardente, passion fruit liqueur, pulp, lemon juice, syrup and egg white into a shaker.

2. Dry shake hard for 15 seconds without ice to build the foam.

3. Add ice and shake hard again for about 20 seconds until cold.

4. Fine-strain into a chilled coupe.

5. Garnish with a few drops of bitters on the foam or float half a passion fruit.
